The Haddock dish is one of the many dishes that can be made in a variety of ways. This includes, baking, frying, grilling and smoked haddock recipes.
The cheese-topped baked haddock that I will be sharing with you is one of the easiest that you can prepare in just a few minutes. Approximately 35 minutes of total preparation and cook time is needed for these delicious cheese-topped baked haddock loin fillet.
- 2 lbs haddock fillet loins (skinless optional)
- 3 tbsp butter
- 6 green onions thinly sliced
- 1 tbsp fresh chopped parsley
- 3 tbsp minced red bell pepper
- 2/3 cup white cheddar cheese crackers (crushed)
- 1/3 cup seasoned bread crumbs
- 2-3 tbsp cream sea salt pepper
How to prepare:
In your sauté pan, melt butter on a medium low heat. Using an oven safe baking dish, place the haddock loin fillet that has been buttered. (If the skin is still attached, place the fish on to the baking dish skin side down). Set aside.
Sauté the thinly sliced green onion and minced red bell pepper in the pan until they become tender and flexible.
Preheat oven to 375 degrees.
In a separate bowl, mix the dry ingredients: crushed cheddar cheese crackers, seasoned breadcrumbs, parsley, sea salt and pepper.
Into the sauté pan pour the dry mixture slowly, holding the red pepper and green onion. To combine all the ingredients, mix slowly. If it is too dry, add cream to the mixture. Spread the mixture over the haddock loin fillets. Baste the fish with the mixture while baking.
Put the baking dish in the oven and bake for 25 minutes. To test if the fillet is done, use a fork to see if it is easily flaked. While the fillet is in the oven, you can make a side dish of rice pilaf with green beans, asparagus with tomatoes or broccoli, cheesy sauce to go with the baked haddock.
On medium heat, melt 2 tbsp. butter in the pan, sauté tomatoes and 1 lb. of tips of asparagus, cook until tender but firm. Serve with baked haddock.
